There is something about grilled vegetables that has me digging for second and even third helpings. Personally, I would only dig into a salad if it was bursting with flavors, and when I made this Halloumi Salad at home I was instantly in love with the delicious Mediterranean flavors of this dish.
To prepare you will need the following
1 small red onion finely sliced
5 TBSP of Extra Virgin Olive Oil
1 red bell pepper sliced thinly
1 yellow bell pepper sliced thinly
3 – 4 medium sized firm tomatoes, sliced
A pack of Halloumi cheese thickly sliced
Fresh Basil Leaves
Drizzle your Grill Pan with some Olive Oil and add the peppers and tomatoes. I used the GRILLA by IKEA, a personal favorite in my kitchen.
GRILLA Made from aluminium, which spreads heat evenly and energy efficiently, and makes it easier to regulate heat so the food does not burn and stick.
Once grilled nicely and fragrant turn to the other side….
Arrange the sliced tomatoes on a platter first, and top with the roasted peppers.
Then place the halloumi cheese for a minute until each side has golden brown stripes and arrange on top of the peppers
Garnish with Onions and basil leaves and season with the remaining olive oil.
