These huge Canapés (oxymoron duly noted) are great for gatherings, movie night, and even dinner. After you’ve had one, it’s quite hard to stop reaching for seconds or thirds. Just make sure to use fresh baguette for optimum results.


  • 1 French Baguette
  • 1 Green Bell Pepper (cut into small cubes)
  • 1 Red Bell Pepper (cut into small cubes)
  • 3 tablespoons of corn
  • 6-8 Fresh Mushrooms cut into small cubes
  • 1 cup shredded mozzarella cheese
  • 1/3 cup light mayonnaise
  •  Salt and pepper  to taste


  • Pre-heat oven to 200 degrees
  • Cut French Baguette into 2 CM slices
  • Mix all ingredients together until tossed thoroughly
  • Using a soup spoon, scoop up mixture and spread over baguette slice until fully covered
  • Repeat until all baguette sliced have been used up
  • Place on a non-grease baking
