Canapes make a great dinner snack, especially when you’re hosting a party.

They are hard to stop at the first or the second one! So, i wanted to share this simple recipe with you.

I learned this recipe from my sister in law Lubna – and we still make it occasionally.

You probably have most ingredients in your pantry, if you don’t have fresh baguette and have frozen steak bread that also works, just make sure to thaw the bread first.

MUSHROOM BELL PEPPER CANAPES

These huge Canapés (oxymoron duly noted) are great for gatherings, movie night, and even dinner. After you’ve had one, it’s quite hard to stop reaching for seconds or thirds. Just make sure to use fresh baguette for optimum results.

Ingredients
  

  • 2 French Baguettes Cut into 16 equal pieces
  • 1 Large Green pepper, diced finely 1 cup
  • 6 - 8 Mushrooms, diced finely 1 Cup
  • 1 Medium Red pepper, diced finely 1/2 cup
  • 1 Small Sweet corn can 1/2 cup
  • 1/3 Cup Mayonnaise
  • 1 TSP Salt
  • 1/2 TSP Black Pepper
  • 1 Cup Shredded Mozzarella Cheese

Instructions
 

  • Pre-heat oven to 220 degrees
  • Cut French Baguette into 2 CM slices
  • Mix all ingredients together except cheese until tossed thoroughly
  • Using a soup spoon, scoop up mixture and spread over baguette slice until fully covered
  • Repeat until all baguette sliced have been used up
  • Top with shredded cheese
  • Bake at 220 for 8 - 10 minutes until cheese is melted and slightly bubbles
