Easy to fill, hold, and eat, these Mini Soft Tortilla Taco Boats make it even more fun to spoon in your favorite fillings into bite sized tacos! If you can’t find them at your local grocery store, the chicken recipe is still a winner with fresh ingredients in both soft and hard tacos.

Ingredients

  • Taco Shells
  • 4 Boneless Chicken Breasts Cubed
  • Radishes Sliced
  • Cilantro for Garnish
  • 1 TBSP Lime Juice
  • 1 Tomato Diced Finely
  • 1 Onion Diced Finely
  • Lettuce Shredded Finely
  • Sour Cream
  • Cheese (Optional)

Chicken Marinade 

  • 1/3 Cup Veg Oil
  • 1/4 Cup Lime Juice
  • 2 Garlic Gloves Minced
  • 1 TBSP Fresh Parsley
  • 1 TSP Cumin
  • 1 TSP Oregano
  • 1/2 TSP Pepper
  • Salt to Taste

Directions 

  •  

    Combine all marinade ingredients (veg oil, lime juice, garlic, parsley, cumin, dried oregano, and pepper) and season chicken. You can leave this overnight for extra flavor, or you can let it sit for 30 minutes and cook the chicken

  • Layer your lettuce in the taco boats, followed by the chicken, and top with tomatoe, onions, some lime juice and a dallop of sour cream. Garnish with cilantro and serve
