Perfect for just about any BBQ and defiantly has summer written all over it.


Ingredients

  • 4 potatoes
  • 1 carrot peeled & cut into thin round slices
  • 1 cucumber cut into thin round slices
  • ¼ cup Japanese mayonnaise (I used Kewpie)
  • 1 green onion cut into thin slices
  • 1 TBSP Lemon
  • Salt/Pepper to taste
  • ¼ cup crab

Directions

  1. Peel potatoes and bring to boil until tender
  2. Meanwhile, combine onions and cucumbers and season with salt, set aide
  3. Prepare dressing by mixing the mayonnaise and lemon juice and whisky until combined thoroughly
  4. When potatoes are cooked, drain water and mash up with fork. Allow the mixture to cool down to room temp.
  5. Place the cucumbers and onions mixture in a towel and drain all liquid to ensure they remain crunchy
  6. Add the cucumbers, onions, and carrots, to the potato mixture once cooled, then mix in the mayonnaise dressing
  7. Top off with the crab mixture and mix again
  8. Season with salt/pepper to your liking
