Lentil Soup

This is a lentil soup that defies expectations of what lentil soup and can be made in batches and frozen without losing quality.

  • 1 TBSPVeg Oil
  • 2 CupRed Lentils
  • 2Medium Potato's diced finely
  • 4Carrots shredded
  • 2Large Onions
  • 1Liter
  • 1 TBSPSalt
  • 1 TBSPCumin
  • Croutons/Dill for garnish

الطريقة

  1. Add oil to a sauce pan and add onion until translucent
  2. Then add the red lentils to the onions for 5 – 10 minutes until it changes color, then add carrots and potatoes. Add 1 liter of water for 30 minutes, then add to food processor and pulse until smooth
  3. Add water if the mixture is too thick to thin it down and to return to sauce pan. Add Cumin and Salt and whisk to mix, allowing it to boil for 5 minutes
  4. Serve and garnish with crotons and dill (or parsley to your preference)
