Quinoa Salad

This nutritious, easy-to-make Quinoa makes a great side dish or entrée. Zesty with a hint of heat, you'll always go for seconds.

  • 2 cupsboiling water with salt
  • 1 cupBob’s Red Mill GF Quinoa from Juthour
  • 1 TSPFresh Lemon Zest
  • 3/4 CupCorn
  • 1 CupCherry Tomatoes (quartered)
  • 1/2 CupGreen Onions
  • 1 1/2 CupKidney Beans
  • 1/2 CupPalmetto
  • 1/4 CupChopped Cilantro
  • Salt/Pepper to Taste
Dressing
  • 2 TBSPfresh lemon juice
  • 1 TBSPOlive Oil
  • 1 TSPSalt
  • 1 TSPCumin
  • 1/2 TSPChili Sauce (or more to taste)

الطريقة

  1. Bring 2 cups of water to boil. Add salt.
  2. Add 1 cup Bob's Red Mill Quinoa.
  3. Cover and cook for 12 - 15 minutes on medium heat.
  4. Fluff off, rinse, and allow to cool down before tossing salad.
  5. Mix in all salad ingredients and season with salt/pepper to taste.
  6. Mix all the dressing ingredients and fold into salad.
  7. Allow to sit in the fridge for 2 hours at least and serve.
