Pumpkin Spice Cupcakes/Cake

This recipe for pumpkin spice cupcakes is loaded with pumpkin and warm spices and can be topped with cream cheese frosting.

Ingredients

  • 1/2 CupSoftened Butter (100grams)
  • 3/4 CupWhite Sugar
  • 1/3 CupBrown Sugar
  • 2Eggs
  • 2 1/4 cupflour
  • 2 1/2 TSPPumpkin spice (I use Badia)
  • 1 TBSPBaking Powder
  • 1/2 TSPBaking Soda
  • 1/2 TSPSalt
  • 3/4 CupMilk
  • 1 CupPumpkin Purée
For Cream Cheese Frosting
  • Beat all of the below together until the frosting comes together
  • 100 gramsbutter (softened)
  • 1package cream cheese (softened)
  • 4 cupsconfectioners' sugar

Method

For the cupcakes

  1. Mix the dry ingredients and set aside.
  2. Beat butter and add brown sugar and white sugar.
  3. Continue beating until it forms a light color then add the eggs.
  4. Add the pumpkin puree and continue beating.
  5. Gradually add the milk until the mixture comes together.
  6. Gradually add the dry ingredients as you continue mixing.
  7. Line up your cupcakes tray with silicon molds or paper cups and fill in 3/4 of the filing.
  8. Bake at 180° degrees for 20 minutes
  9. If frosting with cream cheese, make sure your cupcakes are totally cooled down before you do so.

For Cream Cheese Frosting

  1. Beat room temp butter until creamy.
  2. Add the cream cheese and beat again.
  3. Add the sugar and beat until frosting comes together,
