Ingredients
- 4Beets cubed (Boiled or roasted)
- 1/2 Cupcubed Feta cheese
- 1/3 cupolive oil
- 1/3 cuplemon juice
- 1/3 cupparsley or green onions (Optional for garnish)
- Salt/pepper to taste
Method
- Boil beats until tender. Peel, cube and allow to cool down completely before using in this recipe.
- In a bowl whisk olive oil, lemon. parsley or green onions.
- Drizzle the dressing over the cubed beets.
- Top with feta cheese and serve.
