4Beets cubed (Boiled or roasted)
1/2 Cupcubed Feta cheese
1/3 cupolive oil
1/3 cuplemon juice
1/3 cupparsley or green onions (Optional for garnish)
Salt/pepper to taste

Method

Boil beats until tender. Peel, cube and allow to cool down completely before using in this recipe.
In a bowl whisk olive oil, lemon. parsley or green onions.
Drizzle the dressing over the cubed beets.
Top with feta cheese and serve.
