Boiled or roasted

cubed Feta cheese

olive oil

lemon juice

parsley or green onions
Optional for garnish
Salt/pepper to taste
Instructions
Boil beats until tender. Peel, cube and allow to cool down completely before using in this recipe.
In a bowl whisk olive oil, lemon. parsley or green onions.
Drizzle the dressing over the cubed beets.
Top with feta cheese and serve.
Notes
Tip:
You can make the beets one night prior and let them sit in your fridge until your ready to use them. Boiled beets keep well up to one week.
