Beetroot salad is super easy and you don’t need much effort to make it.

It is a wonderful dish whether it’s summer or winter.

  • 4 Beets cubed Boiled or roasted
  • 1/2 Cup cubed Feta cheese
  • 1/3 cup olive oil
  • 1/3 cup lemon juice
  • 1/3 cup parsley or green onions Optional for garnish
  • Salt/pepper to taste


  • Boil beats until tender. Peel, cube and allow to cool down completely before using in this recipe.
  • In a bowl whisk olive oil, lemon. parsley or green onions.
  • Drizzle the dressing over the cubed beets.
  • Top with feta cheese and serve.


Tip: You can make the beets one night prior and let them sit in your fridge until your ready to use them. Boiled beets keep well up to one week.
