In a bowl mix flour, cocoa, salt, and baking powder. Set aside.
In the bowl of your stand mixer cream the butter and cream cheese.
Gradually add the sugar until well incorporated.
Add egg and vanilla.
Add red food coloring and continue mixing until it blends through the whole mixture.
Gradually add in the dry ingredients (minus the powder sugar) and mix until well incorporated.
Chill in fridge for at least one hour before shaping.
Preheat oven to 180 degrees.
Meanwhile, shape dough into equal balls, we used an ice cream scooper.
Roll cookie dough in powder sugar and place on baking tray.
Bake for 8 minutes and then take out. Let them cool down for 2 minutes before moving them to cooling rack.
The cookies will be soft, remember they continue baking outside the oven, so don't over bake.
