So, I’ve been dying to get a slow cooker, I mean the convenience is worth it, right? So, after going back and forth and debating whether it will end up sitting in the back of the closet in my kitchen, I decided to finally give it a go, yes I’m known for not investing more than 20-30 minutes per meal in the kitchen, but what about something more? Especially on a Friday when I would rather spend the quality time with my daughter than cook?
INGREDIENTS
- 4 Chicken Breasts
- 4 Small Potatoes, halved
- 2 Large Carrot, halved and cut length-wise
- Spring Onions for Garnish
SAUCE INGREDIENTS
- ½ Cup low sodium soy sauce
- ½ Cup Honey
- ¼ Cup Ketchup
- 3 Garlic Cloves
- 1 TBSP Dried Basil
- ½ TSP Chili Pepper
- ¼ TSP White Pepper
CHICKEN SEASONING
- 1 TBSP White Pepper
- 1 TSP Cumin
- 1 TSP Onion Powder
- 1 TSP Garlic Powder
- 1 TSP Sweet Paprika
DIRECTIONS
- Season the chicken and set aside.
- In a bowl combine all sauce ingredients and set aside.
- Layer the ingredients in the following order: Chicken Breasts, ½ the amount of the sauce seasoning, topped with potatoes, carrots, more chicken (if you have any to spare), and then remaining sauce seasoning.
- Cover and cook on high heat for 3-4 hours.
My husband loves his chicken broiled, so when serving I put it on the broil for 2 -3 minutes per side to crisp up.
For sauce, I used whatever was left in the bottom of the slow cooker, added it to a sauce pan and added a tablespoon of corn starch to thicken the sauce.
Serve hot drizzled with sauce and garnished with green onions.
