Perfect for just about any BBQ and defiantly has summer written all over it.
Ingredients
- 4 potatoes
- 1 carrot peeled & cut into thin round slices
- 1 cucumber cut into thin round slices
- ¼ cup Japanese mayonnaise (I used Kewpie)
- 1 green onion cut into thin slices
- 1 TBSP Lemon
- Salt/Pepper to taste
- ¼ cup crab
Directions
- Peel potatoes and bring to boil until tender
- Meanwhile, combine onions and cucumbers and season with salt, set aide
- Prepare dressing by mixing the mayonnaise and lemon juice and whisky until combined thoroughly
- When potatoes are cooked, drain water and mash up with fork. Allow the mixture to cool down to room temp.
- Place the cucumbers and onions mixture in a towel and drain all liquid to ensure they remain crunchy
- Add the cucumbers, onions, and carrots, to the potato mixture once cooled, then mix in the mayonnaise dressing
- Top off with the crab mixture and mix again
- Season with salt/pepper to your liking
