• 3 eggs, room temp
  • 1 TBSP Vanilla
  • 200 grams softened butter
  • 2 ½ cups flour
  • ½ TBSP Salt
  • 4 TSP Baking Powder
  • 3 cups green zaatar, washed with water squeezed out of it
  • 3 cups white cheese, unsalted, and cut into cubes


  • Beat softened butter until creamy, add eggs and vanilla.
  • Sift flour, salt and baking powder, then add in the zaatar and cheese to the flour mix.
  • Gradually add the dry ingredients into the mixture until well incorporated.
  • Using an ice cream scooper for equal sized rolls or even a spoon, scoop on to a tray covered with parchment paper.
  • Bake in a preheated oven at 180 degrees for 15 – 18 minutes or until golden brown tops.
