Galayet Bandoora is sautéed tomatoes stewed with garlic, olive oil, pepper, and salt. You can enjoy it over a bed of rice, alone, or dip with bread.
Ingredients:
- 3 sliced tomatoes
- one diced small onion
- one diced green pepper (spicy is optional)
- 3 TBSP of EVOO
- 2 TBSP of minced garlic
- 1 TSP of Salt
- 1 TBSP of Tomato Paste (If needed)
Directions:
- Add EVOO to a frying pan and add onion
- Add garlic and lower heat
- Add the Tomatoes and green peppers and cover leaving it to simmer for 10 – 15 minutes
- Using a wooden spoon break the mixture apart, if it’s not red enough you can add a TBSP of Tomato Paste
- Season with Salt and Serve hot!
