Beetroot salad is super easy and you don’t need much effort to make it.
It is a wonderful dish whether it’s summer or winter.
Beetroot Salad
Ingredients
- 4 Beets cubed Boiled or roasted
- 1/2 Cup cubed Feta cheese
- 1/3 cup olive oil
- 1/3 cup lemon juice
- 1/3 cup parsley or green onions Optional for garnish
- Salt/pepper to taste
Instructions
- Boil beats until tender. Peel, cube and allow to cool down completely before using in this recipe.
- In a bowl whisk olive oil, lemon. parsley or green onions.
- Drizzle the dressing over the cubed beets.
- Top with feta cheese and serve.
Notes
Tip: You can make the beets one night prior and let them sit in your fridge until your ready to use them. Boiled beets keep well up to one week.
