Manakeesh, or Manakish or however you want to spell it is a staple in the Middle eastern cuisine especially for breakfast.

A soft flatbread dough topped with a variety of toppings, packed with flavors you cannot go wrong with this express recipe that rises and rolls within 20 minutes. If you’ve seen our Instagram video with Hana you would know that we also use this to make a quick pizza when we don’t want to wait for a long process proof.

Ingredients

First part takes 10 minutes. Second part takes 10 minutes. By the 30 minute mark you have a pizza or a manqoosheh to eat!

PART 1

  • 2 Cups Flour
  • 2 Cups Warm Milk
  • 2 TBSP Yeast
  • 1 TBSP Sugar (mix above until it bubbles)

PART 2

  • 3 Cups Flour
  • 1 TSP Salt
  • 1/2 Cup Oil (Do not use Olive Oil it has a strong flavor)

Directions

  • Mix part 1 for 1 minute. Let it rest for 10 minutes until the dough bubbles like a pancake.
  • Add part 2 and mix. Let it rest for a 10 minutes so the gluten comes together. Meanwhile you can preheat your oven and cut prepare your toppings.
  • Roll out on a floured surface, shape into into discs, and add your favorite toppings.
  • Bake and enjoy.
