Fresh Summer Veggie Rolls are perfect for the Spring, Summer, and anytime you want to enjoy the fresh deliciousness of veggies.
Ingredients
- Rice paper
- 1 Cucumber Cut in half and lengthwise into smaller cuts
- 1 Carrot Cut in half and lengthwise into smaller cuts
- Lettuce leaves (Consider romaine instead of iceberg)
- Avocado cut into thin slices
- Any other vegetable you’d like to add is fine
- Sesame seeds for garnish
Dipping Sauce
- ½ Cup Soy Sauce
- ¼ Cup Rice Vinegar
- ¼ Cup finely chopped spring onions
- ¼ TSP Ginger Powder
- 1 TSP Sesame Seeds
Directions
- Fill a large bowl with warm water and dip each wrapper for a few seconds until it softens
- Place ingredients across the center leaving the sides uncovered
- Fold the sides inwards then roll tightly like a spring roll and roll in sesame seeds for garnish
