It’s a versatile recipe, that takes almost no time to cook up thanks to IKEA vegetable balls.

The vegetable balls are made of chickpeas, green peas, carrots, red bell peppers, corn, kale, onions, rapeseed oil and seasonings.

IKEA Vegetable Balls Curry

A vegetarian dish for Ramadan and Lent since they are overlapping this year! Packed with flavor and 100% vegetarian.

Ingredients
  

  • 2 TBSP Organic Coconut Oil
  • 1 Onion Diced
  • 2 Garlic Cloves
  • 2 CM Ginger Grate
  • 4 TBSP Curry Powder
  • 400 Grams Strained Tomatoes
  • 1 TBSP Tomato Paste
  • 1 TSP Red Pepper
  • Garnish with Coriander

Instructions
 

  • Sautee IKEA Vegetable Balls in some coconut oil until browned.
  • In the same pan with the remaining coconut oil, cook diced onion until translucent.
  • Add 2 garlic cloves.
  • Grate 1 - 2 CM of fresh ginger.
  • Cook well and then season with 4 TBSP of curry.
  • Once the mixture is well incorporated add 400 grams of strained tomatoes, followed tomato paste.
  • I like to add a TSP of chili pepper, it's optional but gives a nice hint of heat and flavor.
  • When the sauce boils return the vegetable balls and coat well.
  • Serve and garnish with coriander.

Tip: Make it creamy by adding cream of coconut.
